This yummy potato and sausage soup is sure to satisfy on a cold night. It’s also great paired with home made quick mix biscuits. I added garlic and shredded cheddar cheese to our biscuits and they turned out great!! I discovered this soup also freezes well!

Ingredients for Potato and Sausage Soup

4 cups potatoes, cubed & boiled {I left the skins on ours but you could also take them off}

1/2 lb. Velveeta cheese, diced {to melt quicker}

2 tbsp. butter

milk & flour {I eyeballed these!}

salt & pepper to taste

How to Make Potato and Sausage Soup

While boiling the potatoes, I browned some sausage in a separate pan, after cutting into bite sized pieces. At the same time, I had cubed the Velveeta and had it on low to melt. As it melted, I added about one cup of milk and the butter. Once it was totally melted, I whisked in a couple of tablespoons of flour to thicken the sauce. After the sausage was browned, I added the sausage and potatoes to the cheese sausage and stirred. Voila – dinner is served!
