Homemade Mexican Rice

Recently, I ran out of boxed Mexican rice. At first, I was upset thinking that dinner was ruined. Then I decided to improvise and this tasty dish was born! Plus, I’m sure it’s healthier since there aren’t a bunch of preservatives in it!

 

Make sure to hang onto this recipe because you can use it in tomorrow’s recipe as well! 🙂

 

Ingredients for Homemade Mexican Rice

 

  • 2 cups brown rice {I used quick cook!}
  • 1  3/4 cup water
  • 1 tablespoon butter
  • 2 tablespoons chili powder
  • 1 tablespoon dried minced onion
  • 3 teaspoons paprika
  • 3 teaspoons garlic powder
  • 2 teaspoons crushed red pepper

How to Make Homemade Mexican Rice

 

First, I made the rice following the directions. I added the butter to the boiling water before adding the rice. Once the rice was cooked I mixed in the ingredients and stirred well. You could definitely kick them up a notch as well if you like things spicier. This recipe is for four servings.
