Mini Meatloaves

 

My freezer cooking extravaganza continues with these delicious, single serving mini meatloaves! This size is perfect to freeze and heat up quickly. Plus, they are the exact size of those Hawaiian Sweet Rolls I love, making them ideal to use for meatloaf sandwiches!

 

Ingredients for Mini Meatloaves

 

  • 2 pounds hamburger
  • 1 onion
  • 2 eggs
  • 1 box stuffing mix
  • 1 tablespoon crushed garlic
  • 2 tablespoons brown sugar
  • 3 tablespoons of each mustard and ketchup
  • dash of salt and pepper

 

How to Make Mini Meatloaves

 

Preheat your oven to 400 degrees. I grab a great big bowl and toss all the ingredients in and then use my hands to mix. It’s super messy but it’s the most effective way I’ve found of incorporating everything together! Sometimes, I feel like it needs a little extra mustard or ketchup, so I keep them handy if the mixture seems too dry!  After everything is well mixed, fill each well of a muffin tin full of meat. I fill it right to the top and I pat it to make sure it’s pressed in and even so that it cooks right. I ended up cooking mine for about 40 minutes. I let them sit for about 5 minutes until they had cooled a little and then removed each mini meatloaf from the tin. Once they were completely cool, I put them in a freezer safe container and stored them to eat later!
