No Bake Granola Bars.

 

After checking out the list of ingredients in store bought granola bars, I was pretty horrified. No way do I want that stuff in us! I started trying out recipes and finally tweaked one to our liking! I hope you enjoy these no bake granola bars as much as we do. The boys couldn’t get enough. Thankfully, this recipe easily doubles {or triples!} so it’s easy to make enough to enjoy now AND later! They also freeze great!

 

Ingredients for No Bake Granola Bars

  • 1/2 cup honey
  • 1/3 cup brown sugar
  • 1/4 cup peanut butter {creamy or crunchy}
  • 1/4 cup unsalted butter
  • 4 cups quick cook oats
  • 2 cups crispy rice cereal
  • 3 teaspoons vanilla
  • mix ins of choice: we like chocolate chips and coconut! Dried fruit or nuts would also be good.

 

How to Make No Bake Granola Bars

 

In a large bowl, combine your dry ingredients and set aside.

In a saucepan, bring the honey, brown sugar and butter to a boil. Then turn the heat down and simmer until the sugar dissolves. Remove from the heat and stir in your peanut butter and vanilla.

Pour over the dry ingredients and mix well. Add in your mix ins.

Press the granola mixture into a pan lined with parchment or wax paper. You’ll want them about 1/2 inch thick so they don’t fall apart. I used a can of fruit to help smoosh them down! Cool on the counter until room temperature and then cut into bars. You can store in a ziploc bag or a Tupperware container or even put them in the freezer!
