Super Easy Pumpkin French Toast

Pumpkin French Toast.

 

Since I had some pumpkin leftover from making pumpkin oatmeal earlier this week, I decided to be creative and try a new breakfast idea for Zane’s birthday yesterday. This pumpkin french toast was a hit and super delicious! Both boys requested seconds and I even added some blueberries on top, making them even more amazing!

Ingredients for Pumpkin French Toast

 

  • 10 slices of bread {I used whole wheat}
  • 3 eggs
  • 3/4 cup of milk
  • 1/2 cup pumpkin
  • 1/8 cup sugar
  • 2 teaspoons pumpkin spice mix
  • 1 tablespoon vanilla extract

How to Make Pumpkin French Toast

In a bowl, I whisked together all ingredients except the bread. Then I grabbed a pan and turned the stove a couple notches before medium. I put just a little butter in the bottom of the pan so my bread wouldn’t stick. Then I quickly dipped each slice of bread in the liquid mixture before putting in the pan. I cooked on each side for 2-3 minutes until the bread was a little crispy on the outside. It browned really nicely! You could top with fruit, powdered sugar, butter, or syrup!
